Globally, food waste represents 35% of all food production, Of these, 40% corresponds to the production stage. This is partly because the market categorizes products in tiers 1,2, and 3 depending on size, shape, and color. Customers mostly buy tier 1, leaving tier 2 and 3 discarded by the producer or sold at below-cost prices. This rejected produce can account for 20-40% of total production in a well-maintained small farm. In the end, this waste translates into lost income for small and medium producers and an environmental hazard.
Sero is a lyophilization company that usually sources discarded tier 2 and 3 fruits from local small and medium producers. These fruits are lyophilized and sold to other companies in the fruit industry that use them as input for their food production or resell them in international markets.
Sero buys these usually discarded products generating a social and environmental impact. Currently, Sero can source and transform around 75 tons of raw fruits; that otherwise will be discarded every month. Sero contributes to the income of small and medium farmers who can now sell this fruit. In addition, Sero offers technical training to operate freeze-drying machines, and they are currently expanding their use of renewable energy with Greendipity.
